Roasted Rainbow Cauliflower

Roasting brings out the natural sweetness in cauliflower and the variety of colors—purple, orange, or green makes this side dish or snack, a feast for the eyes.

 

Ingredients:

Preheat oven to 425°

1 pound orange, purple, green, or white cauliflower florets, 2 inch pieces

2 Tablespoons olive oil

salt, to taste.

Directions:

1.  Place cauliflower in a large bowl and drizzle with olive oil. Season with salt

2.  Set cauliflower on baking sheet pan and bake about 25 minutes.

3.  Remove from oven and transfer to a serving dish.
