I Can’t Believe It’s Vegan: Oatmeal Cookies

Bake up a batch of these super easy cookies with your favorite mix-ins to add flavor!

Preheat oven 350˚


1 ½ cup oats, put into blender 5-10 seconds, coarse

1 cup flour

1 cup chocolate chips

1 cup toasted nuts, chopped

¼ teaspoon baking powder

¼ teaspoon salt

½ cup maple syrup

½ cup canola oil

Optional Mix Ins:  orange zest, 1/8 cup toasted amaranth grains, coconut, toasted pumpkin seeds, dried cherries, raisins, or 1  teaspoon  cinnamon.

Directions:  Combine the above ingredients in a mixing bowl.  With a spoon, scoop dough on to a parchment-lined sheet pan.  Bake at 350˚ for 10 to 12 minutes. Makes 1 dozen.
