This dish captures all the flavors of fall– sweet juicy pears, notes of ginger, and honey welcome the season into your kitchen. Pear compote keeps all week, and is a wonderful healthy topping on pancakes, oatmeal, french toast, or layered with yogurt and granola for an afternoon energy boosting treat.
Ingredients:
4 cups unsweetened apple juice
1 inch piece of fresh ginger
6 ripe but firm pears, such as Bartlett, Bosc, or Anjou, cored and sliced 1/4 inch thick
2 tablespoons honey
Directions:
Combine apple juice and ginger in a saucepan and bring to a boil.
Add pear slices to saucepan and simmer 5 to 10 minutes, until just translucent. Remove pears using a slotted spoon and set aside in a bowl.
Add honey to compote liquid and bring to a boil for about 20 minutes, until it is reduced. It will look golden and syrupy. Pour syrup over pears and let it cool
